  1. Happy New Year!!!!

    Hello my darling bunnies!

    Today is the very first day of 2012. I hope you all had a wonderful Holiday season filled with love , friends, family, and good food! 2011 has been a crazy whirlwind adventure for me, and I’m happy to share that things are still full steam ahead. Now is not the time to get into details, but I offer you my sincere apologies for leaving this space vacant for so many months.
    We rung in the new year surrounded by close friends , at home. Our place has become the go-to location for intimate cocktail parties, and my new challenge as of last month, is to make a different dip for every gathering,last night being no exception! I’ve promised to share my recipe for my smokey jalapeno popper and corn fiesta dip, so here we go!

    Lenora’s Smokey Jalapeno Popper and Corn Fiesta Dip
    What you need:
    -1 package cream cheese (I use light)
    -1 1/2 cups thick sour cream
    -1/2 cup mayonnaise ( I prefer Helmans)
    -5 to 6 garlic cloves, minced
    -1/2 teaspoon smoked paprika
    -1/2 teaspoon chipotle powder
    -1/2 cup finely chopped fresh or pickled jalapenos
    -1 cup corn (any kind will do, I used frozen peaches and cream, thawed)
    -2 cups shredded cheddar cheese
    -Chopped veggies of your choice to garnish ( I used red peppers, cherry tomatoes, pickled jalapenos and green onions)
    What to do:
    -Add sour cream, cream cheese, 1 cup of shredded cheddar, garlic, paprika, chipotle powder, chopped jalapeno and mayonnaise to food processor and blend until combined and smooth. Add mixture to large bowl
    -Stir in corn
    -Add cheese and corn mixture the bottom of a serving dish ( I just use a good ol fashioned pyrex dish, since I classy like that)
    -top with layer of shredded cheese, and garnish with veggies.
    -Refrigerate at least one hour before serving
    -Serve with tortilla chips, crackers, or your choice of crusty bread.



    Short and sweet for today , my darlings! Today I am determined to wade through my back log of posts for my various other blogs, post some new items in my vintage clothing shop, do some sewing for my upcoming trip to Cuba, and get in some cuddle time with Nick and the feather babies.
    Before I run, I’d like to thank my wonderfully generous and loving parents for my Christmas present this year- a brand spankin’ new Canon Rebel T3i DSLR camera. This camera is pure magic, and I’m so glad to be able to take such high-quality photos for my blogs and shop.

  2. Lenora turns 26- Fat Glam Party Food!

    Hello darling bunnies!

    So, August 25th marked my 26th wonderful year on this fantastic planet.

    In years past I’ve celebrated this joyous occasion with stretch limos, fancy hotel parties, or good ol’ fashion beach-campouts. This year, however I wasn’t feeling extravagant and decided to have an intimate evening with friends, a fabulous party dress, and of course- FOOD!
    Really though, birthdays come but once a year, so why not wear an elaborate and over-the-top party dress? Why not decorate the tables with photos of yourself as a child, striking your signature pose? This fabulousness transcends generations, people. It had to be shared.
    The menu for evening was casual and low-key. Easy snacks and finger food, nothing overly filling or complicated, but everything worked together wonderfully. There was mini caprese salad on a stick (tomato, fresh mozzarella and basil puree dipped in balsamic vinegar) , bacon wrapped water chestnuts with a veggie tray, and the most loved and well-received: pizza dip.
    I loved how simple yet elegant the caprese salads turned out; so easy to pop in your mouth between bits of conversation and no mess to worry about. The bacon wrapped water chestnuts delivered the delicious taste of bacon, with a satisfying crunch from the water chesnuts- also these are a great substitute for scallops, to avoid any food poisoning from sitting out too long at the party,and to please the non-seafood-eaters. Now, the pizza dip? It was gone in no time. Layers of cream cheese, pizza sauce, cheese, pepperoni and olives; basically a delicious pizza without the crust, enjoyed scooped up with crackers or tortilla chips.
    Several friends have been kicking me in my voluptuous bottom to get things in gear and post about my party food- ” WE WANT THE DIP RECIPE!” Well, without further delay my darlings….
    Mini Caprese Salad Poppers
    What you need:
    -1 or 2 packages of cherry tomatoes ( I used two packs for 15 people)
    -1 or 2 chunks of fresh mozzarella
    -1 bunch of fresh basil
    -3 tbsp balsamic vinegar
    -1 tbsp olive oil
    -1 bunch toothpicks
    What to do:
    -cut mozza into bite size pieces
    -puree basil in food processor with olive oil
    -Put a dab of basil puree ontop of a chunk of cheese and top with a cherry tomato.
    -Secure with toothpick
    -pour balsamic vinegar into shallow dish, and dip cheese into vinegar.
    -Arrange salad bites on tray, and serve!
    Bacon Wrapped Waterchestnuts
    What you need:

    -1 pound bacon
    -2 small cans of water chestnuts
    -toothpicks
    What to do:
    -preheat oven to 400C
    -Cut bacon strips in half
    -Roll single water chestnut in bacon and secure with toothpick
    -Using a self-draining roasting pan, or baking sheet, bake for about 15-20 minutes until you achieve the crispness you prefer
    -blot on paper towel to remove excess fat an grease
    -serve of tray with vegetables and ranch dressing for dipping
    Lenora’s Infamous Pizza Dip!
    What you need:
    (double recipe for larger groups)
    -1 package cream cheese
    -1 cup sour cream
    -whole head of garlic (aww yeah!)
    -2 tsp oregano
    -ground pepper
    -1 1/2 cups pizza sauce or pasta sauce of your choice
    -1-2 cups shredded mozza
    -1-2 cups sliced pepperoni
    -1/2 cup sliced olives
    -any other pizza topping you’d prefer!
    What to do:
    -Preheat oven to 400C
    -Blend together cream cheese, sourcream and all of your minced garlic, oregano and pepper, and spoon into baking dish.
    -sprinkle very light layer of mozza over cream cheese mixture
    -spoon on pizza sauce
    -sprinkle on generous amount of mozza
    -Top with your preference of pizza toppings ( I used cured pepperoni on one section, and green and kalamata olives on another for my veggie friends)
    -Bake for 15 minutes until cheese is bubbly.
    -Serve with bread , crackers or tortilla chips!
    And there you have it bunnies!
    The party was a success: fantastic company, fantastic food, fantastic conversation, fantastic beverages…Happy birthday to me!!!
