Hello my darling bunnies!
Last night, Nick and I hit the road to beautiful Fundy National Park for our first camping trip of the season!
The weather forecast was grim, and called for heavy rain later in the weekend. Friday afternoon was sunny , warm and bright so we packed up the car and decided to chance it.
We planned to stay two nights, and I had a huge fancy campfire meal planned for Saturday night , however, Mother Nature decided to be extra passionate and begin pouring heavily late into the night. We packed back up very early Saturday morning and retreated home .
Despite the simplicity, I still want to share with you what I cooked! We kept it simple as we arrived late- but boy, nothing is quite like a smokey, fire-cooked meal!
I know what many of you are thinking- “Oh Lenora, you can’t tell me you actually CAMP!” Oh bunnies! I am the goshdarned Martha Stewart of the outdoors! Tent-pitching, fire-building, fishing, hiking, canoeing – I love it all! Fat girls camp. Femme-fatales camp. Need proof? I will put my vanity aside and showcase my wonderful camping apron of choice. Yes, no makeup AND sneakers- yet still the most glamorous thing in the woods.
We made fire-roasted local sausages and spicy garlic asparagus. Smores came later for a sticky and sweet dessert.
There really isn’t much to share in terms of a recipe, I’m afraid, but here it goes!
The sausages are locally made and gluten-free, cooked until golden brown over the fire. I enjoyed mine dipped a spicy bold mustard. Nick got to enjoy big soft buns…I’ve yet to find a good gluten-free bun around here. This makes me somewhat sad.
For the asparagus I simply wrapped a bunch in tinfoil, dabbed on some butter, garlic powder, red pepper flakes and salt and pepper. I cooked them in the embers for about 30 minutes.
S’mores are pretty self-explanatory . Kinnikinnick Foods makes a delicious gluten-free graham cracker for which I am eternally grateful! Paired with a piece of extra-creamy Hershey’s chocolate and a perfectly-toasted marshmallow, you get my all-time favourite campfire treat.
All in all- despite our trip being extra-short, we really enjoyed ourselves. We love the outdoors and nature, and a cozy stay in a tent. Last summer was spent battling health problems, and we were unable to enjoy any camping at all – so we plan to make up for that this summer! We have many more camping trips planned for when the weather is better, and I will be sure to share with you all my best campfire cuisine!
